This ancient and delicious recipe is made with juicy dottato figs of Cosenza, in Calabria, Southern Italy.

 

Plump, sun-dried Figs are soaked and slow-cooked before shaping into balls.  These are wrapped in fig leaves, then slow baked at low temperature.  The caramel and liquorice flavours are a delicious complement to soft cheeses, pecorino and ricotta.
